Cheapo gourmet meatball sandwich
While I might like to think I eat and cook fancy truth is I don’t. Even without restrictions on season, money, or time I would still eat bologna, velveeta, and other things I have just come to call comfort food. But sometimes I want something nice or sort of fancy but I don’t want to spend a lot of money.
These meatball sandwiches were fantastic and come in at around a $1 per hearty inch sub. Of course that is not counting whatever labor and water costs went into my sister growing the garlic and basil that I heaped so plentifully into this quick mix. But I just threw some frozen meatballs from target into a pot along with garlic, onion, bell pepper and mounds of fresh basil, along with some canned spaghetti sauce. Simmer it all for a half hour or so. Toss it all into a bun, top with mounds of cheap grated Parmesan and some mozzerella, and toss in the toaster oven for 5 minutes or so. Though in one instance I obviously walked away and forgot about my meatball sub and ended up burning it.
But there you go. Super cheap awesome dinner. Great for quick lunches or dinners over the next few days for the left-over sort of satisfaction.
