Stuffed Clammish Seaweed Seitan
Not sure how to name these new things yet. More in the quest for vegetarian meat substituted meals bringing exciting eating options to the world in a way that might be more sustainable than everybody actually eating meat. Certainly it would be more “humane”. Anyway, I love clams, clam chowder, and especially stuffed clams. Meaty beefy veggie burgers
I purchased a variety of fake meats from the “natural” stores near me in order to get an idea of what is out there and how I might improve my experiment into vegetarian meat analogs. A whole lot of money later I was a lot disappointed and a little pissed off. It was shocking to me how bad these supposedly high quality fresh good for you commercial offerings could be. Cacao nut marbled dessert (raw food)
In honor of an old and new friend, who I thought were attending open mic, and are raw foodies I endeavored to make three different recipes. Kale chips (like healthy uncooked potato chips), Broccolli and parsnip rice with nut sauce entree, and a cacao nut marbled desert. Only the the kale chips and the dessert were completed (timing with open mic ruined the entree). But only the kale chips came out as stupendous. While everyone seemed to enjoy and marvel at the uncooked dessert it was nothing like the delicate thing the recipe I was using suggested it would be.

On the heals of my recent experiments in Southwestern fare I decided to try again for open mic.
Corned-Beefy Seitan HASH
As far as I know the history of hash is that of a dish using up left over meat diced up with some potatoes to get one more meal out of the left-overs. I probably just made that up, but that is indeed what I did with the last of the corned-beefy seitan that was now drying up and no longer useful for even pretending to make Reubens. And to my mind the texture and flavor of this corned beef styled seitan made an ideal corned beef hash. Loved it.

The more I mess with fake meats the more I realize there are just certain foods and recipes that a life long vegetarian would have no way to imagine or begin to appreciate. And it hit my sister would have no idea what or why I love Reuben sandwiches so much. And the more I experiment with fake meat the more I recognize that texture and seasoning are the key components in some meat recipes. Curried Potato Salad
Very similar dressing to the #2 more curried macaroni salad. I like a lot of curry. And this was made with homemade mayonnaise, pretty groovy.
